Default Strawberry Shortcake

I made this for my hubby's birthday and it was awesome! I used unsweetened whole frozen strawberries and just sliced them up myself. Enjoy.....I did.

Strawberry Shortcake

Prep: 25 min.
Bake: 15 min.
Cool: 10 min.
Makes: 8 servings

Ingredients:
  • 6 cups sliced strawberries
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/2 cup butter
  • 1 beaten egg
  • 2/3 cup milk
  • 1 cup whipping cream, whipped*

Directions:
  1. In a small bowl stir together the strawberries and 1/4 cup of the sugar; set aside. Stir together remaining sugar, the flour, and baking powder. Cut in butter until mixture resembles coarse crumbs (pastry cutter works best). Combine egg and milk; add to flour mixture. Stir just to moisten. Spread the dough in a greased 8x1 1/2-inch round baking pan.
  2. Bake in a 450 degree F oven for 15 to 18 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan for 10 minutes. Remove from pan. Cut into two layers. Spoon half of the whipped cream and strawberries over bottom layer. Replace the top layer. Top with remaining berries and whipped cream. Cut into wedges to serve.


*Whipped Cream

Ingredients:
  • 1 cup whipping cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla

Directions:
  1. Chill a medium mixing bowl and the beaters of an electric mixer.
  2. In chilled bowl beat whipping cream, sugar, and vanilla with an electric mixer on medium speed until soft peaks form.
